Yesterday was Pi Day. And being married to a mathematician, we did celebrate that glorious day.

It started with Pizza Pi for lunch.

Followed by Maple Syrup Pi for dessert after dinner

And we had another piece of Pi as a snack later that night.

Unfortunately for me, it looks like Pi Day will be followed by Salad Week. So how did you celebrate Pi Day?

Sugar Shack Pie

Prep Time : 30 min

Cooking Time : 30 min

Cooling Time : 3 h

Portions : 8

Ingredients

Crust

250 ml (1 cup) all-purpose flour, unblanched

15 ml (1 tblspoon) sugar

1 pinch of salt

75 ml (1/3 cup) cold unsalted butter, cubed

1 egg

15 ml (1 tblspoon) cold water

Filling

45 ml (3 tblspoon) corn starch

45 ml (3 tblspoon) water

375 ml (1 1/2 tasse) maple syrup

60 ml (1/4 cup) whipping cream 35 %

1 egg, lightly beaten

30 ml (2 tblspoon) unsalted butter

Directions

Crust

In your food processor bowl, mix the flour, sugart and salt. Add cubed butter and pulse a few seconds at a time until the butter is the size of small peas. Add the egg and water. Mix until the dough starts to come together. Add water if needed. Take the dough out of the food processor and form a disc by hand.
On a floured work surface, roll the dough and cover a 9″ pie dish. Let it cool down in the fridge for 30 minutes.
Preheat over to 220 °C (425 °F). Put the rack at the lowest position.
Cover your unbaked crust with aluminium foil, and place some dry beans on top. Bake for 10 minutes. Take the aluminium and beans out, and bake for about 10 more minutes or until golden brown. Let the crust cool down.

Filling

In a saucepan – before heating it up – mix the cornstarch and the water. Add the maple syrup, the cream and the egg. Mix well.
Slowly bring to a boil, while constantly mixing with a whip. Let boil for about one minute. Add tghe butter and mix until its completely melted. Pour in crust. Let the pie cool down and refrigerate for about 3 hours.
Serve with vanilla ice cream (optionnal)

March 14th is also a very special holiday, and even if it’s overshadowed by Pi Day – pretty much in the same way Michael Jackson’s death overshadowed Farrah Fawcett – it still worth celebrating.
